GFDF High Fat Peanut Butter Cups
These peanut butter cups are dairy free and full of healthy coconut oil. Many kiddos with ASD aren’t getting enough healthy fats in their diet for their brains to properly function. This is a fun treat to ensure they get some healthy fats.
+ Fill a muffin pan with cupcake liners
+ Melt Dairy free chocolate chips with coconut oil in a double burner (add coconut oil to your liking – if it seems too runny, add more chocolate chips. I would start with a small amount and slowly increase).
+ Once melted, pour a thin layer in each cupcake liner and freeze for 10-15 minutes
+ Melt organic peanut butter (try to get 2 ingredient peanut butter; peanut butter and salt) with coconut oil. Follow same directions above, adding a little coconut oil at a time. Remove the frozen chocolate from the freezer and pour a thin layer or peanut butter on top. Place back in the freezer for 10-15 minutes
+ Remelt your chocolate and pour the top layer of chocolate onto the frozen peanut butter. Freeze pan for 1 hr until cups are completely frozen. Top with sea salt.
