One of the easiest, cleanest, and tastiest meals for even the pickiest kiddos! These coconut chicken tenders with turmeric avocado dipping sauce are a HUGE hit in our house, and SO simple to make. These are #glutenfree #caseinfree #eggfree #soyfree and delish!
+ Take organic chicken tenderloins and gently pound to even thickness
+ Cut into 3 or 4 chunks per tenderloin
+ Load a plate with organic coconut flakes
+ Firmly press chicken into coconut flakes
+ Place organic coconut oil in a cast iron and wait for it to get hot
+ Place the nuggets in the pan and cook 3 min per side (or until golden brown)
+ Blend avocado, 2 tbsp of filtered water and turmeric to taste for the dipping sauce. You can also skip the turmeric and blend your avocado with lime and cilantro.
